Not only is this recipe super-quick to make, but by altering the cut of chicken or the coleslaw ingredients, you can tailor it to what you fancy. So if you’re addicted to deep-fried chicken, it’ll feel like you’re choosing from a takeaway menu.

It’s best to have a mandoline to slice the vegetables. Apart from being one of the most wonderful words in the English language, a mandoline is key when ‘thinly’ slicing anything. It’s a super-cheap piece of equipment and has transformed my relationship with raw vegetables – you’ll never look back.

Serves 2
Ready in 35 minutes
Ingredients
The chicken

* 1 large free-range chicken breast
* 1 free-range egg white
* polenta
* 40g fine meal
* 15g freshly and finely grated parmesan
* A good pinch of cayenne pepper
* 1/2 tablespoon olive oil
* 1/2 lemon, cut into wedges
* Salt and freshly ground black pepper

The home-made coleslaw

* 4 small radishes, top and tailed
* 1/2 small red onion
* 1/2 small bulb of fennel, top and tailed
* 50g red cabbage
* 35g celeriac, peeled
* 75g Greek yoghurt
* 1 teaspoon sherry vinegar
* Salt and freshly ground black pepper

Method: How to cook crispy chicken with home-made coleslaw

1. Cut the chicken breast into super-thin strips of roughly the same size. Lightly whisk the egg white in a medium-sized bowl.

2. In another bowl, combine the polenta, parmesan and cayenne pepper.

3. Dip each chicken strip, first in the egg white and then in the polenta mixture until well covered. Set aside on a large plate.

4. When all the chicken strips are coated, heat the oil in a non-stick frying pan.

5. Cook the chicken for seven minutes on each side, over a medium high heat, until it is cooked through and the outside is crispy and golden. Season to taste.

6. While the chicken is cooking, use a mandolin (I like using the ‘julienne’ setting for the celeriac) to thinly slice all the vegetables into a big bowl.

7. If you don’t have a mandolin, you can cut it by hand with a sharp knife but it will take around 10 minutes.

8. Once all the vegetables are cut into thin slices, pour in the yoghurt and the vinegar and toss thoroughly.

9. Season well and serve with the crispy chicken, a sprinkling of cayenne and some lemon or lime wedges for those who fancy a bit of an edge.

This is sooo good. It’s one of our favorites. Kinda like the crockpot recipe but that one can be a little hard to make beause it’s easy to over-cook the rice in a crockpot. Anyways, I hope yall like this one as well. Sorry I’m not responding to everyone, I don’t have the time but I’m trying to add more videos for you guys at least. I do appreciate all the comments. There you were happily reaching your goals in weight loss and then there it was, the weight had started to return. You likely are thinking to yourself, how in the world did that happen? This is not true, even those foods listed above, have fat reduced versions now days.

Always have support! This is an important aspect of any diet. Without support, it is extremely hard to begin and keep with any diet plan. Your loved ones should be there to offer you support while you are dieting. Furthermore, thee are a great many weight loss counselors, meetings, and forum groups that can help you along in your journey.

What is great about weight loss groups is that they have been right where you are in your journey to weight loss, so they can offer some unique advice and insight. For example, they can give you ideas about new and exciting ideas for exercising or with recipes for eating healthy, as well.

Finally, do not give up! When you give into the nagging craving for your favorite foods, you are taking yourself a little further from your weight loss goals each time. Being on a diet does not mean you need to have tasteless foods, but it does mean you need to steer clear from high fat and high calorie foods. Opt for the alternatives instead of the sure to bring your weight back foods.

2 pounds of boneless, skinless chicken breast, cut into 2″ pieces.
2 tablespoons lime juice
2 cloves garlic, minced

Tortilla Soup

Here in Southern California, Mexican food is as common as burgers and fries.

But for a really authentic Mexican restaurant, head to Olvera Street in Downtown Los Angeles.

During my visit to Olvera Street, I enjoyed some great Mexican recipes, from the crunchy beef taquitos at Cielito Lindo, to the soft carne asada tacos at La Noche Buena.

I ended my visit with some homemade churros, dusted in cinnamon and sugar. They’re the ultimate portable dessert!

One of the dishes I enjoyed most was tortilla soup which can be made several ways.

Today we are making Chicken Tortilla Soup. Now let’s get started on this easy tortilla soup recipe.

If you have leftover chicken or leftover turkey making mexican tortilla soup is a great way to use up your leftovers for a second meal.

After roasting a chicken (and eating most of it), I’ve still got plenty of great meat I can peel off. Make sure you only get the meat. You don’t want any chicken fat, which does not have much flavor. Cut into bite size pieces. You’ll want roughly 2 cups of diced chicken.

After I dice up the cooked chicken it’s time to get the rest of the ingredients together.

Here is the recipe:

2 cups diced cooked chicken
2 tablespoons butter
2 celery stalks, sliced
2 carrots, sliced
Half an onion, chopped
Small bunch of cilantro leaves, roughly chopped
2 cloves garlic, minced
1/4 teaspoon cayenne pepper
1/2 teaspoon dried oregano
1 tablespoon ground cumin
1 tablespoon ground chili powder
15 ounce can tomato sauce
2 quarts chicken stock or broth

Topping:
1 avocado, sliced into lengthwise strips
1/2 cup shredded cheddar cheese
2 corn tortillas, cut into strips and fried (You can cheat with crumbled tortilla chips)

Preheat your soup pot on medium high. Add butter. Melt it down, and add the carrots, celery and onion. Stir down for 3 minutes.

Add garlic and cilantro. Stir another minute.

Add diced cooked chicken and spices. Stir another minute, coating the chicken with the spices.

Add tomato sauce. Let thicken for a couple minutes, then add the broth or stock. Bring back to a rapid boil, then set heat to low and simmer uncovered for about 30 minutes.

While the soup is simmering, fry your tortilla strips at 375 degrees about 1-2 minutes. Drain and set aside. You can also shred the cheese and slice the avocado at this time.

After 30 minutes, check the soup. Add salt to taste. I don’t usually add more than a teaspoon of salt.

Garnish with tortilla strips, shredded cheese and avocado wedges. Enjoy!
