Panera Low-Fat Chicken Noodle Soup – Copycat Recipe?

On their website they show home versions of their recipes! I don’t recall ever seeing this one but you can e-mail them to either run it as a feature or send it to you.
this is a low fat recipe that is almost like it and is really delicious
Ingredients
5 cups chicken stock, with all visible fat removed or low-fat chicken broth
1 large onion
1/2 cup sliced celery
1/2 cup sliced carrot
3 garlic cloves, minced
1/2 teaspoon dried thyme
pepper
4 boneless chicken breasts, cut into 1/2 inch pieces
1 tablespoon fresh parsley
3 ounces no yolk noodles
Directions
In a medium sized pot combine stock, veggies and spices except parsley.
Bring to a boil and cook for 3 minutes.
Add the chicken and cook for 8-10 minutes or until tender.
Stir in parsley.
While chicken is cooking, cook the noodles in a large pot as per package directions.
Drain and add to soup.

Chicken And Broccoli Alfredo Recipe
Serves/Makes: 4
Ingredients:
6 ounces uncooked Fettuccine
1 cup fresh or thawed and drained Broccoli
2 tablespoons Butter
1 pound skinless, boneless Chicken Breasts, cubed
1 (10-3/4 oz) can condensed Cream of Mushroom soup
1/2 cup Milk
1/2 cup shredded Parmesan Cheese
1/4 teaspoon ground White Pepper
1/2 teaspoon Salt, or to taste
Directions:
Cook fettuccine noodles to desired doneness. Add broccoli the last 4 minutes. Drain well. In a non-stick skillet over medium-high heat, heat butter. Add chicken and cook until brown and juices run clear. Stirring often. Add soup, milk, cheese, pepper and fettuccine mixture, cook through until smooth and hot. Stir constantly.

Lightened Up Chicken Broccoli Alfredo Recipe
ngredients
1/3 cup fresh lemon juice
2 Italian seasoning
1/2 teaspoon salt
Coarsely ground black pepper
3 to 4 boneless, skinless chicken breasts, cut into bite-size pieces
1/3 cup all-purpose flour
1/4 cup (1 ounce) grated Parmesan cheese, plus more for garnish
2 tablespoons olive oil
3 garlic cloves, minced, divided
2 cups broccoli florets
1 pound pasta (spaghetti, penne, fettucine)
2 tablespoons butter
2 cups 2% reduced-fat milk
Instructions
1. Combine lemon juice, seasoning, salt and pepper in a large bowl. Add chicken and toss to coat well. Combine flour and Parmesan cheese in a small bowl. Sprinkle 2/3 of this mixture over chicken.
2. Heat oil in a large skillet. Add 2 cloves of minced garlic. Add chicken pieces; cook, turning occasionally, until browned, 10 to 15 minutes.
3. Steam broccoli until crisp-tender and set aside.
4. Cook pasta according to package instructions. Do not overcook. Drain well.
5. Remove browned chicken from the pan. Add butter and remaining garlic to pan. Stir in remaining Parmesan mixture. Cook, stirring constantly. When bubbly, stir in milk. Cook until thick and creamy. Add chicken and broccoli to sauce. Stir to cover pieces. Serve over hot pasta. Top with freshly ground black pepper and grated Parmesan, if using. Serves 6.

Healthy Chicken and Broccoli Alfredo

8 oz. package of Linguine (whole wheat or omega enhanced variety)
1 cup Fresh or Frozen Broccoli Flowerets
2 tbsp Butter
1 lb. Skinless, Boneless Chicken Breast Cut Into 1 1/2 " Pieces
1 10-11oz can Campbell’s Condensed Cream of Mushroom Soup (choose 98% Fat Free or 25% Less Sodium)
1/2 cup Low Fat Milk
1/2 cup Grated Parmesan Cheese
1/4 tsp Ground Black Pepper
Directions:
Prepare linguine according to package directions. Add broccoli during last 4 minutes of cooking time. Drain broccoli and linguine in colander. Heat butter in 10" skillet over medium-high heat. Add chicken and cook until browned, stirring often. Stir soup, milk, cheese, black pepper and linguine mixture into skillet. Cook until mixture is hot and bubbling. Top with additional parmesan cheese.
Substitutes: Use Grilled chicken breast, cut into chunks instead of boneless chicken. You can also use 1 lb. fresh large shrimp, shelled and deveined, instead of chicken. Cook shrimp until pink.

Where can I find healthy, easy recipes for 2?
Posted by: | CommentsI’m a below-average cook with very little interest in cooking, but I feel like my husband and I eat out way too often. Fast food, take out, or sit down restaurants nearly every day. I also recently found out I have borderline high cholesterol.
I don’t like spending an hour or more cooking only to eat a meal in less than 15 minutes and have leftovers that are wasted. Plus there’s always the chance that I’ll flub the recipe and it will be inedible or disappointing. I’m not interested in counting calories or losing weight, but rather I want to start eating a whole lot more veggies and fresh food. I was raised on pork chops, meat loaf, fried chicken, spaghetti, etc. I have no idea how to cook interesting veggie dishes. Anyone have recommendations for websites or books that sound like they might help?
I highly recommend a subscription to one of the Reiman Publication’s cooking magazines. Here is one of their online links called Cooking For Two. Very simple, delicious, and easy meals/recipes.

Heart Healthy Foods: Sun Dried Tomato and Chicken Pasta

Sue Mallick with Food City presents a fresh recipe for Sun Dried Tomato and Chicken Pasta at Food City’s Cooking School. Ingredients:
3/4 cup boiling water
1/4 cup sun-dried tomatoes
10 oz whole wheat pasta
2 tsp olive oil
1 red onion
3 tsp minced garlic
4 boneless chicken breasts cut into strips
1 pkg sliced mushrooms
1/2 cup chicken broth
2 tbsp dijon mustard
3/4 tsp oregano
3 tbsp low fat sour cream
2 tbsp fresh parsley
Combine boiling water and sun-dried tomatoes in a small bowl, let stand 20 minutes. Drain and thinly slice tomatoes, reserving liquid. Cook pasta, drain and keep warm. Heat olive oil in a skillet over medium heat. Add onion and chicken, cook until onion is tender. Stir in mushrooms and garlic and cook until chicken is golden brown. Add the chicken broth and cook on high. Cook the chicken, stirring constantly, until it is cooked through and most of the liquid has evaporated. Stir in sun-dried tomatoes, reserved liquid, mustard, and oregano; bring to a boil. Remove from heat and stir in sour cream and parsley, toss with pasta and serve.

I’ll share one of mine:
Dinner:
steamed pesto chicken breasts (serves 2)
In your steamer, assemble 2 6-oz chicken breasts, 1/2 cup low-sodium chicken broth, 4 Tablespoons fresh basil, minced fine, 4 cloves minced garlic, dash each of salt and pepper, 1/4 cup white wine, and 2 Tablespoons toasted pine nuts. Steam for 20 min., or until chicken is all the way cooked.
Serve with brown rice pilaf (serves 2)
Saute 1 cup shiitakes, sliced (or other mushrooms), one med. onion, minced, and 1 clove of garlic, minced, in 1/2 cup of low-sodium chicken broth. When onions are translucent, add 1 C. of cooked brown rice, and season with Spike. Heat rice through and serve.
Awesome green beans:
1 lb green beans
2 Tablespoons toasted sesame seeds
2 oz prosciutto, cut in tiny pieces
1 Tablespoon olive oil
Brown prosciutto pieces in pan, and toast sesame seeds. Set aside. In skillet, heat olive oil and cook green beans until tender. Toss with sesame seeds and prosciutto.
One of my ‘hints’ is to use chicken or beef broth when sauteeing anything, instead of olive oil or butter – serves the same function, while adding NO fat, and almost no calories (only 10 cals. for 1 cup of this stuff.)
Try looking at WebMD since they have loads of healthy recipes and you can sign up and have them sent to your email. They send a few each week. Most of my recipes are healthy ones and my favorites or I would not be making them. Most recipes also can be changed to become healthy or better for you than how they are made up. Just need some experience.
Recipes for Healthy Meats Besides Chicken or Fish?
Posted by: | CommentsI just started cooking a year ago, and I love cooking "healthier" food–not necessarily rice cakes and spinach leaves, but not super greasy or goey with sugar and cheese either.
I have a subscription to Kraft’s recipe magazine, and have my grandma’s recipes, but most of them use chicken and fish. While I understand the importance of both, I’m looking to expand my "menu" a bit.
Does anyone have any recipes for any meat (besides chicken and fish) that aren’t too difficult? Thanks!
Beef is the 2nd easiest meat to cook, next to chicken.
If you really want, look into tofu. It takes on the flavor of whatever you cook it in. There’s a misconception of it being very disgusting. But that’s only a stereotype of it. Look into it. Try it at least once. Most chinese restaurants in America sell Chicken Tofu. Try that and see what you think. VERY healthy, too.
As for the beef, you can make ALOT of things, like:
Filet of Beef
London Broil
Meatloaf (can be mixed with ground-turkey for a better flavor and a more health concious person)
Salisbury Steak
Meatballs
Stroganoff
Pepper Steak
Beef Fajitas
Ribs
Hungarian Goulash
Chili
Also, look into the book, "The New American Chef." That should be of BIG help for you.
