Healthy Chicken Sandwich recipe ?

Heyya…if someone could type an easy to make..or a bit tough….healthy yet tasty chicken sandwich recipe then that would be really helpful. Thanks a lot!
@ Edit : Ok I changed my mind..it doesn’t have to be THIS easy!
Spicy…tangy is the main criteria

Well its not so hard really, here what I eat everyday for dinner since im on diet:

Spicy Chicken Sandwich:

First you buy those packages at Walmart or something that have like 5 pieces of chicken breast. I like to pick the Tyson brand. Each serving is 110 calories and around 5-10 calories from fat and 26g of protein, which is very good.

Then buy Bimbo Soft Wheat bread, or if you can find it, buy Bimbo 100% whole wheat. I buy mine off H.E.B. dunno if you have that store where you live. 2 slices are 120 calories, 10 calories from fat.

And finally a spice called Cayenne Pepper Powder. Its very healthy and helps increase metabolism. Maybe perhaps you would like to add a little pepper too?

You can add lettuce or avocado if you wish!

Just sprinkle the desired amount of Cayenne Pepper on the chicken breast & cook it on high. I cook mine without any oil because it already contains fat which works well to not stick so much.

And vuala, you have a very delicious chicken sandwich for less than 300 calories and high in protein & wheat

And if you cant find the Bimbo brand, make sure the bread you buy does NOT have high fructose corn syrup. Many breads do.

EDIT: Hmm well if you prefer tangy…you could always add a little lemon. Maybe perhaps you would like to cook the chicken breast in lemon juice or celery leaves for a change?

But whatever you do, do not add mayo, mayo is never healthy even though it claims to be "low fat".

i have two picky eaters (a 2 year old and my husband) and i’m pregnant and trying to make sure i don’t gain too much weight like i did with my first. he’s also in the military and i can’t plan out when he’ll be home exactly for dinner.

I like to coat boneless skinless breasts with one of McCormick’s Salt Free seasonings. You may need to pound the chicken if it’s really thick at one end. Sear the chicken on high heat in a stainless steel pan for about 2 minutes a side. You want to carmelize the outside, but not burn it. Put the pan in a preheated 350 degree oven, cook 15-20 mins. This piece of chicken is very versatile.

You can cut it up and put it in pasta with chopped fresh tomatoes, olives, and some olive oil.

You can dress your pasta with a regular pesto or sun dried tomato pesto instead of fresh tomatoes. Pesto is easy, put sun dried tomatoes, fresh parsley and basil and olive oil in a small food processor. Process it into a paste and put on the hot pasta and chicken. You can leave out the sun dried tomatoes and add pine nuts and parmesan instead if you want.

You can slice the chicken and serve it on a roll as a sandwich or you can eat it as is. I serve it with cous cous that I prepare with olive oil and the same spice that’s on the chicken.

I’m not a big fan of clutter, so even though I love to cook my kitchen gadgets are pretty minimal. However, in my book a slow-cooker is an absolute must-have, especially if you have hungry kids to feed! My 51 pound nine-year old son is hands down the biggest eater I have ever seen for someone his size (he’s always been a big eater, but now that he’s getting older and getting bigger his appetite is growing in proportion). Anyway, to keep the little rascal properly fed I find I’ve been turning to my slow cooker more and more frequently. As long as I do a little advanced planning and have the ingredients on hand I can put together a huge meal with less than 15 minutes of hands-on prep. Best of all, I can assemble the ingredients in the morning, go off and do my thing, and come back to a hot and healthy whole foods dinner at night.

The slow cooker also turns out the absolute moistest chicken ever and this recipe is no exception. Tender and juicy, this crowd-pleasing chicken dinner is much healthier than most because the chicken is pastured and free-range (the spices I use also have anti-inflammatory and detoxifying properties). I can’t emphasize the importance of eating chickens that are free to range, pastured and fed the natural diet chickens are supposed to eat. And of course for a chicken to be optimally healthy, it should be exposed to sunlight and be free to move and exercise. This healthy chicken lifestyle is in sharp contrast to the typical factory-farmed chicken that is cooped up in a cage with no room to move around, fed a very deviant diet and exposed to artificial lights rather than natural sunlight. By the way, unless you specifically go out of your way to eat free range pastured chicken then you can be assured the chicken you eat is unhealthily factory farmed. The factory-farmed chickens not only have an inferior nutritional profile compared to the free-range pastured chickens, but because of their unhealthy living conditions they are highly susceptible to infections. To combat rampant infections (such as salmonella) factory farmers give their chickens antibiotics and then bleach them with chlorine before sending them to market. I find this to be disturbing.

The bottom line is factory-farmed chickens aren’t even a fraction as healthy as their free-range pastured cousins. And, since you can’t separate the health of the animal from the health of the animal eater (you!) then it makes perfect sense to eat only the highest quality animals possible. If you can’t find free-range pastured chicken in your local supermarket then you can order it online from US Wellness Meats.

In this video, Betty demonstrates how to make a Chicken Salad Sandwich that closely resembles the chicken salad served at an upscale restaurant in Lexington, KY. You can serve this as a sandwich or as a salad. (Both are demonstrated.)

Ingredients:

15 oz. canned white chicken chunks (I used Valley Fresh brand, one 10 oz. can and one 5 oz. can. You may use leftover chicken, cut into chunks. )
1/2 cup finely chopped celery
1/2 cup halved red seedless grapes (You may use green seedless grapes.)
1/4 finely chopped pecans (I used an electric kitchen chopper, but you may leave them in larger pieces, if desired.)
1/2 cup mayonnaise
croissants, as many as you need (You can make this healthier with 100% whole wheat bread slices.)
freshly washed and dried lettuce leaves

In a medium to large mixing bowl, combine 15 oz. chunked chicken, 1/2 cup chopped celery, 1/2 cup halved grapes, 1/4 cup chopped pecans, and 1/2 cup mayonnaise. Stir until well-combined. Split a croissant in half horizontally. If desired, broil the cut sides of the croissant to keep them from absorbing the chicken salad filling. Now, place a couple of fresh lettuce leaves on the bottom half of the croissant, put a generous amount of chicken salad on top of the lettuce, and cap it off with the top half of the croissant. Continue until your materials are used up. As an alternative, you may place lettuce leaves on a serving plate, and place a large mound of chicken salad on top. If you have any pecan crumbles left, sprinkle them on top. Place a fresh, hot croissant alongside. This is just *one* way to make chicken salad. It is also great if you substitute pineapple, chopped dates, raisins, etc., in place of the grapes! You can make this a *very* healthy dish, if you choose, because *you* have control of exactly what goes in it!!!
