Where can I find healthy, easy recipes for 2?
Posted by: | CommentsI’m a below-average cook with very little interest in cooking, but I feel like my husband and I eat out way too often. Fast food, take out, or sit down restaurants nearly every day. I also recently found out I have borderline high cholesterol.
I don’t like spending an hour or more cooking only to eat a meal in less than 15 minutes and have leftovers that are wasted. Plus there’s always the chance that I’ll flub the recipe and it will be inedible or disappointing. I’m not interested in counting calories or losing weight, but rather I want to start eating a whole lot more veggies and fresh food. I was raised on pork chops, meat loaf, fried chicken, spaghetti, etc. I have no idea how to cook interesting veggie dishes. Anyone have recommendations for websites or books that sound like they might help?
I highly recommend a subscription to one of the Reiman Publication’s cooking magazines. Here is one of their online links called Cooking For Two. Very simple, delicious, and easy meals/recipes.

A yummy easy to make healthful Chicken Salad?
Posted by: | CommentsI’m taking care of my friend’s mom for two weeks, and need a few easy recipes for a healthy lunch. I’m not a great chef (just learning how to make a roux) Help this greenhorn look good

Dice some boneless, skinless breasts, season with a little salt and pepper, and cook them in a pan until done (or buy the pre-cooked chicken chunks in the market.) Remove from heat and let cool. Shred some carrots, dice some scallions, and mix with a small amount of mayo. Add chicken and mix. Mayo should just barely coat the ingredients, so don’t use too much. Add some black pepper, spoon onto bread, and enjoy!

Posted by: | CommentsMy fiance and I are trying to eat healthier, but we only eat chicken and veggies for dinner, and it has gotten so boring. It’s really hard to find recipes that I can work with cause here is the criteria:
1. Has to be made stove top or crock pot, I don’t have an oven to work with while I am remodeling our kitchen.
2. He hates spicy food, no spice what so ever.
3. He hates onions and green peppers.
I’m also looking for recipes that don’t have weird ingredients that I’ll have to buy special just for that one recipe.

Here is a really good, easy one. To make it healthier you can always do a side of steamed veg, use low sodium soy sauce, and brown rice instead of white…
Crockpot Teriyaki Steak
1. 2 1/2 lb Boneless chuck steak
2. 2 tablespoons Oil
3. 1 t Ground ginger
4. 1/2 c Soy sauce
5. 1 tb Sugar
6. 1 Clove garlic crushed
Cut steak into 1/8-inch thick slices. Combine remaining ingredients
in a small bowl. Place meat in a crock-pot. Pour sauce over. Cover
and cook on low for 6 to 8 hours. Serve with rice…. Makes 5-6

After taking in the Chinese New Year dragon parade, a show by the Kung Fu Shaolin monks, and a Chinese contortionist show, we hit the streets in search of the best Chinese food restaurant in LA. Just be sure to look for that “A” grade in the window!
Yang Chow (819 Broadway) is famous for Chinese seafood like slippery shrimp, and Empress Pavilion serves up classic Cantonese dim sum. At Lucky Deli, you can stock up on Peking Duck.

Today, you can sample freshly made fortune cookies at Phoenix Bakery, where we also found some great shrimp dumplings, sticky rice cakes and chicken rolls. Just don’t leave without trying a slice of their famous strawberry whipped cream cake. It’s incredible.
Well enough of the facts. Let’s hit the kitchen and make a great Chinese chicken recipe.
This orange chicken recipe is famous here in California, where you’ll find it on practically every Chinese menu. But why buy Chinese delivery, when you can make it easily at home?
Now I know the most popular orange chicken is fried, but I think it’s a lot tastier and healthier as a saute. So that’s how we’re doing it today.
ORANGE CHICKEN
2-3 pounds boneless skinless chicken breast, cut into pieces
1 teaspoon minced ginger root
1 teaspoon garlic, minced
1/2 teaspoon cayenne or red pepper flakes (use less if you don’t like it spicy)
4 green onions, sliced
1 tablespoon rice wine
1/2 teaspoon sesame oil
ORANGE SAUCE
3 tablespoons soy sauce
3 tablespoons orange juice
10 tablespoons brown sugar
10 tablespoons white vinegar
Orange zest from 2 oranges
Mix together ingredients for orange sauce. Set aside.
Heat 1 tablespoon of cooking oil in a wok over high heat. Add minced ginger and garlic, stirring about 30 seconds. Add chicken to wok and cook.
Next add the dried red chiles and chopped green onion. Saute again, then pour in the rice wine.
Add orange sauce to wok and stir well.
Make a slurry with 1 tablespoon of cornstarch and 1 tablespoon water until smooth. Add to wok and stir until sauce thickens. Before serving, stir in sesame oil and grated orange zest.
Serve over steamed brown rice.

I dont want to eat just that but i do want to become more healthy! I would like to have recipes with not that much cheese..but any help would be great!!
By the way i can cook most things like from Pancakes to Fried Chicken lol!
SJ-SC-CA Incredible Chicken Salad
3 cups chicken breast (cooked and cubed)
1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 Tablespoons sweet onion (minced)
2 Tablespoons apple juice
Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.

I can’t eat dairy for a while, because of allergies. So I’m going grocery shopping later in the afternoon and I need some ideas on what to buy for lunch. I live alone, so I don’t want to get too much or buy something pricey (e.g. lobster). I’m not big on a lot of leftovers either.
Usually I don’t have a lot of time, so I’ll eat something quick like a grilled cheese sandwich with a salad, or some cottage cheese with tomatoes and crackers. I need some ideas.
Last but not least, I don’t like any of the following: red meat, pork, dark meat (fowl), octopus, lamb, meat that’s packed into a can (e.g. tuna, chicken, shrimp, & spam), protein shakes, meal replacement bars.

Fairly easy recipes for a chicken breast?

Cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some spaghetti following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta.
