200g chicken breast (any fat trimmed off)
Approx 50g Almond Meal
1 tsp Garlic Salt

1 tsp dried Parsley

Sue Mallick with Food City presents a fresh recipe for Sun Dried Tomato and Chicken Pasta at Food City’s Cooking School. This episode accents a free program featured every Monday night at The Crown Point Shopping Center location on North Eastman Road in Kingsport, TN. See www.foodcity.com for complete recipe details.

Ingredients:
3/4 cup boiling water
1/4 cup sun-dried tomatoes
10 oz whole wheat pasta
2 tsp olive oil
1 red onion
3 tsp minced garlic
4 boneless chicken breasts cut into strips
1 pkg sliced mushrooms
1/2 cup chicken broth
2 tbsp dijon mustard
3/4 tsp oregano
3 tbsp low fat sour cream
2 tbsp fresh parsley

Combine boiling water and sun-dried tomatoes in a small bowl, let stand 20 minutes. Drain and thinly slice tomatoes, reserving liquid. Cook pasta, drain and keep warm. Heat olive oil in a skillet over medium heat. Add onion and chicken, cook until onion is tender. Stir in mushrooms and garlic and cook until chicken is golden brown. Add the chicken broth and cook on high. Cook the chicken, stirring constantly, until it is cooked through and most of the liquid has evaporated. Stir in sun-dried tomatoes, reserved liquid, mustard, and oregano; bring to a boil. Remove from heat and stir in sour cream and parsley, toss with pasta and serve.

Everyone, what are your favorite low cal and nutritional meals? This should be some good inspiration and resources for everyone on this board. :-)

I’ll share one of mine:

Dinner:
steamed pesto chicken breasts (serves 2)

In your steamer, assemble 2 6-oz chicken breasts, 1/2 cup low-sodium chicken broth, 4 Tablespoons fresh basil, minced fine, 4 cloves minced garlic, dash each of salt and pepper, 1/4 cup white wine, and 2 Tablespoons toasted pine nuts. Steam for 20 min., or until chicken is all the way cooked.

Serve with brown rice pilaf (serves 2)

Saute 1 cup shiitakes, sliced (or other mushrooms), one med. onion, minced, and 1 clove of garlic, minced, in 1/2 cup of low-sodium chicken broth. When onions are translucent, add 1 C. of cooked brown rice, and season with Spike. Heat rice through and serve.

Awesome green beans:

1 lb green beans
2 Tablespoons toasted sesame seeds
2 oz prosciutto, cut in tiny pieces
1 Tablespoon olive oil

Brown prosciutto pieces in pan, and toast sesame seeds. Set aside. In skillet, heat olive oil and cook green beans until tender. Toss with sesame seeds and prosciutto.

One of my ‘hints’ is to use chicken or beef broth when sauteeing anything, instead of olive oil or butter – serves the same function, while adding NO fat, and almost no calories (only 10 cals. for 1 cup of this stuff.)

Try looking at WebMD since they have loads of healthy recipes and you can sign up and have them sent to your email. They send a few each week. Most of my recipes are healthy ones and my favorites or I would not be making them. Most recipes also can be changed to become healthy or better for you than how they are made up. Just need some experience.

pasta sauce?

i am trying to eat healty and spend little money so i want to start making food and bringing it to work…i bought whole wheat pasta and boneless chicken breasts. i want to make like a chicken pasta but i dont know what kind of sauce i should use? maybe an alfredo sauce? anyone know a low fat recipe for that?

My favorite is to grill the chicken, then slice.. I cook pasta, then sautee some fresh garlic, scallions, and whatever else I can find in fridge in olive oil. Once garlic starts to brown I add chicken strips and the cooked pasta to the pan and toss to coat everything. Then into my tupperware and chill…it a great chilled pasta dish or cabe heated as well. Low in fat, and healthy. Easy to do and transport. Hope this helps…

I am going to make this for the 1st time today. Should I make any changes to the recipe????

CROCKPOT TURKEY BREASTS
Brown 3 slices turkey bacon in pan until almost crisp. Add 1c chopped carrots, 1/2c chopped onion. Cook 2-3 min. Drain fat from pan.
In separate bowl combine 1 can cream chicken soup, 2 cans broth, 1/4 tsp marjarom, 1/4 tsp pepper. Pour this sauce into a crockpot. Add 1 lb turkey breast cut into bite sized pieces and 1 cup wild brown rice and veggie & bacon mixture. Cook on low for 6-7 hours.

Does this sound good? Should I make any changes?
THE RICE is blend of wild and whole grain brown rice. HOW LONG will it take to cook in the liquid in the crockpot???

turkey bacon does not have much fat in it, so I would add some canola oil. Next brown the turkey pieces in the bacon before adding the veggies. Browning the meat will add more flavor to the pot. Also you want to add some salt to the veggies for a sweat. Add some garlic to the mix as well as some celery.I would use one of the cans of broth to deglaze the veggie pan. Change the pepper to white pepper it will look better in the final dish. Lastly I would make the rice separate and add it in just before service. Put it in the veggie pan after you remove the veggies and add the broth and let it cook. You could also add some grated parm.

Baby spinach, whole wheat angel hair pasta, red bell pepper, yellow onion, chicken broth, chicken breasts, garlic and cheese. any ideas? I need to make something relatively healthy. I also have spices, extra virgin olive oil, and and smart balance low fat butter. any suggestions? Thank you!

slice chicken breasts thinly into cutlets. slice onion, and pepper. cook chicken on medium high heat in skillet with olive oil till chick starts to brown, turn and add onion and pepper cook 5 more minutes. add 2 cloves garlic, spinach and cook for 30 seconds. add 1/4 cup chicken broth and cook till boiling, scraping bottom of pan. add cooked pasta and toss for 30 seconds-1 minute.add a little basil. remove to serving dish. top with cheese.

My basic soup recipe:

1 onion
1 large stick celery
6 large carrots
1 vegetable stock cube
Water or milk (milk makes a creamy soup if you like that)
Olive oil
1 bay leaf

Chop the onion and celery and saute lightly in some olive oil until slightly softened in a large pan. Then slice the carrots and add them to the pan along with the stock cube and bay leaf. Stir until the veggies are coated in the stock cube (if you don’t like using stock cubes just add seasoning plus some herbs/spices, ground coriander and ginger go well with carrots). Pour in enough water or milk to cover the carrots and simmer gently until they are soft. Remove bay leaf and blend. Don’t worry if the milk looks like it has split, it will be fine when blended and tastes delicious!
*You can add different veggies to this basic recipe such as courgettes, broccoli, celeriac, potato, leek etc…just experiment!*

A very quick and easy slow cooker (crock pot) recipe:

1 chicken breast per person
1 can 99% fat free condensed cream of mushroom soup
1 tub of fresh salsa or 1 can cherry tomatoes
1 small tub reduced fat soured cream
1/2 sachet of Taco seasoning

Basically mix together all of the ingredients apart from the chicken in the bottom of the crock pot (slow cooker) then bury the chicken breasts in the sauce and cook on high for 3-4 hours (check after 3 hours) until the chicken is cooked through. Or you can cook on low for about 6-7 hours.

You can stir cooked pasta into it just before serving or serve it over boiled rice.
*If you are using more than 4 chicken breasts I would double up on the other ingredients!*
