Looking for a copy cat recipe… Someone that has tried to replicate and has come close…. I love that soup, and would really love to make it at home :)

On their website they show home versions of their recipes! I don’t recall ever seeing this one but you can e-mail them to either run it as a feature or send it to you.

this is a low fat recipe that is almost like it and is really delicious

Ingredients
5 cups chicken stock, with all visible fat removed or low-fat chicken broth
1 large onion
1/2 cup sliced celery
1/2 cup sliced carrot
3 garlic cloves, minced
1/2 teaspoon dried thyme
pepper
4 boneless chicken breasts, cut into 1/2 inch pieces
1 tablespoon fresh parsley
3 ounces no yolk noodles

Directions
In a medium sized pot combine stock, veggies and spices except parsley.
Bring to a boil and cook for 3 minutes.
Add the chicken and cook for 8-10 minutes or until tender.
Stir in parsley.
While chicken is cooking, cook the noodles in a large pot as per package directions.
Drain and add to soup.

He slates most of the ingredients in most of the normal, and health food store bought stock cube and bouillon, so what can he mean?

you can buy low sodium low fat broth at any market.

Who knows how to make good low-fat chicken quesadillas and good salsa?
AND, does anyone know the recipe for TGI Friday’s chicken quesadilla recipe? I tried a search for it but only got Applebee’s which I’d also like to try but I’m asking here for the purpose of getting answers from real people who make their own. Muchas Gracias!

2-3 medium sized fresh tomatoes (from 1 lb to 1 1/2 lb), stems removed, finely diced
1/2 red onion, finely diced
1 jalapeño chili pepper (stems, ribs, seeds removed), finely diced
1 serano chili pepper (stems, ribs, seeds removed), finely diced
Juice of one lime
1/2 cup chopped cilantro
Salt and pepper to taste
Optional: oregano and or cumin to taste

Start with chopping up 2 medium sized fresh tomatoes. Prepare the chilies. Be very careful while handling these hot peppers. If you can, avoid touching them with your hands. Use a fork to cut up the chilies over a small plate, or use a paper towel to protect your hands. Wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours. Set aside some of the seeds from the peppers. If the salsa isn’t hot enough, you can add a few for heat.

Combine all of the ingredients in a medium sized bowl. Taste. If the chilies make the salsa too hot, add some more chopped tomato. If not hot enough, carefully add a few of the seeds from the chilies, or add some ground cumin.

Let sit for an hour for the flavors to combine.

Makes approximately 3-4 cups.

Serve with chips, tortillas, tacos, burritos, tostadas, quesadillas, pinto or black beans.

i do a grilled chicken breast using olive oil, cumin, coriander, chargrilled capsicum and garlic (and a pinch of salt) cant go wrong ;)

Chicken Pasta Salad with Lemon and Peas

2 cups chopped chicken
1 pound(s) bow-tie or small shell pasta
Salt
1 package(s) (10-ounce) frozen baby peas
2 lemons
2/3 cup(s) milk
1/2 cup(s) light mayonnaise
1/4 teaspoon(s) coarsely ground black pepper
1 cup(s) (loosely packed) fresh basil leaves, chopped
4 green onions, thinly sliced

In large saucepot, cook pasta in boiling salted water as label directs, adding frozen peas during last 2 minutes of cooking time. Drain pasta and peas; rinse with cold water and drain well.

Meanwhile, from lemons, grate 1 tablespoon peel and squeeze 3 tablespoons juice. In large bowl, with wire whisk, mix lemon peel and juice with milk, mayonnaise, pepper, basil, green onions, and 1 teaspoon salt until blended.

Add pasta chicken and peas to mayonnaise dressing;
toss to coat well.

Cover and refrigerate up to two days if not serving right away

I love pasta but I am hoping to find a low fat / low calories recipes for pasta.

What are some chicken pasta recipes?
Sauce recipes?
That are all healthy delicious and low fat / low calorie

This recipe is soooo good and you can use fat free cream cheese if you need to and canned diced tomatoes if you dont have fresh, whole wheat pasta in place of the white, and i like to use fresh spinach but wilt it first in a pot over medium heat.

Creamy Chicken Pasta With Spinach And Tomatoes Recipe

2 cups uncooked pasta, preferable penne or ziti
4 boneless, skinless chicken breasts
1 10 3/4 oz. can chicken broth
1 9 oz pkg. cream cheese (I used the light kind)
1 9 oz pkg. frozen chopped spinach, thawed and drained
1 tsp. garlic, chopped
1 tsp. salt
1 tsp. pepper
15 cherry tomatoes, cut in half
1/2 cup grated parmesan cheese, optional

In a large saucepan, bring water to a boil, then cook pasta according to the directions on box.

Slice chicken breasts into approximately 1" cubes. In a large skillet, heat half the can of chicken broth and chicken cubes, turning pieces with a slotted spatula for 5 to 7 minutes until chicken is no longer pink.

Add cream cheese, spinach, remaining half can of chicken broth, garlic, salt and pepper. Heat for about 3 to 5 minutes, until cream cheese has melted. Add cherry tomato halves and cook for an additional 2 to 3 minutes, until tomatoes are soft.

Toss the drained pasta with chicken and vegetable mixture. If desired, sprinkle this dish with parmesan cheese, according to taste.

Does anyone have any healthy, low fat baked chicken recipes?

Marinate boneless, skinless, thawed chicken breast in salsa.

Put chicken on baking sheet and top each piece with a spoonful of salsa.

Bake at 350 F for 27 minutes. During last 3-5 minutes of cooking top with a slice (or handful of shredded) of Mexican cheese…I use 4 cheese Mexican blend.

Yummy!!

How to Cook Chicken Curry

3 pounds chicken pieces or 1 ½ boneless skinless chicken

2 tablespoons vegetable oil

4 cardamom pods (optional)

1 2-inch piece of cinnamon stick (optional)

1 medium onion, finely chopped

4 garlic cloves, chopped

2 teaspoons fresh ginger, chopped

1 medium tomato, finely chopped

1 teaspoon cumin powder

1/2 teaspoon turmeric

1 tablespoons coriander powder

1/2 teaspoon cayenne pepper (optional)

1/2 teaspoon fennel seeds, coarsely ground

1 teaspoon black pepper, coarsely ground

1/2 cup plain nonfat yogurt

1 teaspoon salt

1/2 cup water

2 tablespoons chopped cilantro

1 tablespoon fresh lemon juice

Remove the skin and all visible fat from the chicken pieces. (I often have the butcher clean the chicken.) Cut 23 slits, 1 inch long and 1/2 inch deep, in each piece of chicken. Set aside.

Heat oil in a heavy skillet over medium high heat. Add the chicken pieces in a single layer and fry for 35 minutes, turning the pieces over once or twice until they are white. Transfer the chicken to a plate using a slotted spoon.

Add cumin powder, cardamom pods, cinnamon stick, chopped onion, garlic and ginger to the oil. Fry for 78 minutes, stirring constantly, until the onions are golden brown.

Stir in tomatoes, turmeric, coriander powder, cayenne pepper, ground fennel seeds and black pepper. Fry for 23 minutes. Whip yogurt with wire wisk and add 1 tablespoon at a time, stirring constantly. Fry for another 2 4 minutes.

Add the chicken and sprinkle with salt. Stir to coat the spice mixture evenly. Pour the water evenly over the chicken. Bring to a boil. Reduce heat to low. Add the cilantro and gently stir the chicken. Cover tightly and simmer for 2025 minutes. Chicken should be tender to the touch but should not fall apart.

Transfer to a serving platter. Sprinkle with lemon juice.
