Fairly easy recipes for a chicken breast?

Healthy, preferably, but all are welcome!

Cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some spaghetti following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta.

Parmesan Chicken

1/2 cup dijon mustard
1/4 cup apple juice
2 cloves garlic, minced
2 cups fresh soft bread crumbs
1 cup grated Parmesan cheese
1 Tbsp. butter, melted
1/4 tsp. salt
1/8 tsp. pepper
2 tsp. dried parsley flakes
8 boneless, skinless chicken breast halves
Preparation:
Line a 13×9" pan with foil and preheat oven to 375 degrees.
In shallow pan, mix mustard, apple juice, and garlic. In other pan, mix the crumbs, cheese, parsley, melted butter, salt, pepper, and parsley flakes.

Coat chicken in the mustard mixture, then roll it in the crumb mixture until thoroughly coated. Place the chicken in prepared pan and bake for 20-30 minutes, until golden brown and thoroughly cooked

Well one you could by bread crumbs and bread it,
then leave in an oven with a high of 300 degrees for about 10 minutes or until the chicken is golden brown then serve =D

I cater for a living, so easy is what I’m looking for when I’m burned out.

You can’t get much easier than this. Tenderize your breasts, and if you don’t have a tenderizer, than just poke lots of holes in it with a fork. Put them in a ziploc bag, and add Italian dressing. You can use Lite or even fat free for a super healthy meal. Let it marinate for at least a few hours, overnight, or even for days. Bake, grill, or however you want to cook it.

Funny to me that people are willing to pay high prices for marinated chicken breast by Perdue and other companies, when really all their "Italian Chicken Breast" is exactly the method above.

Try other dressings too, Catalina, Honey Mustard, whatever your palate desires.

Make slits deep into the biggest part of the breast, insert a clove of peeled garlic.

In a skillet, put on med heat, a little bit of oil (use olive with a little veggie). Brown on both sides, hold up and let grill on all the parts that don’t touch the pan.

Total cooking time: 20 – 25 minutes

or Broil in broiler pan, 12 minutes on each side.

My wife and I have changed our life style from the way we eat and over the last ten months and she has lost over 150 pounds and I have lost 75 pounds.This is a recipe that we like. I have taken this from my blog.

Lemon Grilled Chicken
Serves 4

Ingredients:
1 Lemon
3 Tbsp. olive oil
1 clove garlic crushed
1 Tbsp fresh chopped parsley
2 Tbsp fresh chopped basil
2 Tbsp fresh chopped rosemary
2 Tbsp fresh chopped oregano
1/4 tsp salt
1/4 tsp black pepper
4 skinless, boneless
Chicken breast (6oz)

1. Use a peeler to remove strips of zest from half of the lemon then trim into fine strips with a small knife. Grate the other side of the lemon to make 1 Tbsp of zest. Finally, squeeze the juice from the lemon into a bowl.

2. In the large bowl combine the lemon zest, juice from the lemon , oil, garlic, parsley, basil, rosemary, oregano, salt, pepper. Add the chicken breast to the bowl and spoon the marinade over the chicken until well coated. Cover with plastic wrap. Chill for About 1 hour or overnight if time allows. The longer you can marinate the more flavor can absorb.

3. Preheat the griddle, grill or broiler to medium heat. Put chicken on the grill, reserving marinade. Cook chicken untill through, about 10 minutes on each side while continue to brush the marinade 2-3 time during cooking. Cook to an internal temperature of 165 degrees. Garnish with lemon strips and sprigs of parsley.

chicken
cut up wedges of russett potatoes
a little butter
soaked in 1/2 fresh squeezed lemon juice and 1/2 virgin olive oil
then season with cavendars greek seasoning after you pour and coat all ingredients

cook at 350, some ovens vary, until potatoes are tender, NEVER FLIP OR MIX CHICKEN, then broil for almost 5 minutes until tops of everything are crispy brown.

Chicken Cordon Blu

Pound out boneless chicken breasts until thin. Sprinkle with salt and pepper.
Place 1 slice of ham and 1 slice of swiss cheese on each breast
Roll up and secure with toothpicks
Dip each roll into an egg wash and then into breadcrumbs
Place in a baking dish and bake about 30 minutes at 350 degrees.
Pull out and place another slice of cheese on top, put back in the oven for 5 minutes.
Serve with honey mustard
