Healthy, chicken soup recipe?
ByHi I am looking for a chicken soup recipe that is healthy, nutrious and easy to make. I’d prefer recipes that don’t include noodles and include rice and veg. If you have any or any other soup recipes that are not ‘cream of’ i’d appreciate it. The soups would have to be suitable for a very picky toddler as i am out of ways to get her eating her 5 a day! Thanks in advance
I have just the soup you need. You may want to leave out the peppers.

Soup:- Mushroom & Vegetable.
1lb Fresh mushrooms — sliced
2T Butter, divided
1C Carrot — finely chopped
1C Celery — finely chopped
1C Onion — finely chopped
1 clove Garlic — minced
1 can Condensed beef broth
2C Water
1/4C Tomato paste
2 t Parsley flakes
1 Bay leaf
1/2 t pepper
2T Dry sherry (optional)
Combine vegetables and butter in a large pot. Sautee for 5-7 minutes. Add remaining ingredients, and bring to a boil.
Cover; cook on low for 30-45 minutes or until vegetables are cooked. Stir in sherry during last 15 minutes of cooking. Remove bay leaf before serving.*

well my soup works with left overs or new chicken.
all you need is rice, diced carrots, peas and any vegetables that you like
i dice a onion and saute in a small amount of olive oil then add the rice and saute dice all your vegetables and add to onions and rice then if you have left over chicken dice it in small pieces then add water or vegetable stock. (if adding water season with salt and pepper) bring to a boil and let simmer until rice is cooked. enjoy
also a side note if you let you child help they will enjoy eating more.
