I'm not a good cook either, but in the last year I have learned to BBQ, and I put veggies on the grill in aluminum foil. It's quick (about 15 min), hot, and tasty. The only thing that can go wrong is burning them to a crisp, so if you don't do that you're golden.
Corn on the cob with butter and rosemary sprigs, wrapped in foil.

Zuchini, mushrooms, 1 whole mashed potatoe, artichoke hearts, a little oil and spices - microwave the potato for 6 minutes first, that mostly cooks it. Then dice EVERYTHING, mix together and wrap in foil with butter or oil.

Eggplant, sliced, with lemon juice and garlic, on the grill, about 5 min/side, depending on how cooked you like it.

Cook up a little hamburger, add grated cheese, cut up broccoli, minced garlic and apples. Cook in foil.

Those are a few of the good ones I've tested!
Good luck!
