Dinner for one ideas? Recipes with not tooooo many ingredients.?

By admin

I live with my boyfriend and I usually cook for both of us. But, he is travelling for work a lot this winter and I’m looking for Dinner for One ideas?

Low cal/low fat/healthy always a good option!

I have lots of chicken breast, some salmon (but I don’t really like salmon), imitation crab, broccoli, sugar snap peas, peas, pizza dough, bleu cheese, half and half, olive oil, balsamic vinegar, beans, canned tomatoes, instant potatoes, and more…

But, I don’t want to waste food and I don’t want it to be expsensive or taste bad either.

Ideas?

4-6 oz. chicken breast (cubed)
olive oil
1/2 cup snap peas
1/2 cup broccoli
1 tbsp soy sauce
salt
pepper

1. heat 1/2 tbsp of olive oil in saute’ pan

2. add chicken and cook until tender then remove, drain and set aside

3. in the same pan add 1/2 tbsp olive, soy sauce, snap peas and broccoli and cook until tender, about 5-7 minutes add a dash of salt and pepper half way through the cooking

4. add the chicken back to the pan and cook another 2 minutes

Serve over rice, noodles or enjoy by itself
